Vegan gluten-free cook book

I can't believe it ... it's finally here. Long overdue, but best things are worth waiting for, right? :) I'm talking about my cook book, of course :).

Here's a little preview ...



"This vegan gluten-free cook book has 44 recipes, divided into 2 sections. First section is called “The Dinner is served”, which has 22 recipes for lunch and dinner or even for breakfast, if that is what you like to eat in the morning. Second part is called “Sweet tooth”, which contains 22 recipes for breakfast, desserts and treats. All recipes are vegan, gluten-free and sugar-free. Dishes are made with mainly one ingredient foods, which are nutritious and delicious. Bare in mind that recipes are not final – adjust, add, mix and switch ingredients however you feel like it. That’s why you also have other options at the end of each recipe – what and how to add, mix, substitute … If something does not feel right for you, then do not do it. 

Some recipes also have vegetarian options. I do not give you advice to become a vegan, I just provide recipes I personally enjoy. Make dishes with your own twist and satisfy your taste. I highly support experimenting in the kitchen, you never know what exciting combination you may discover next. Always listen to your own inner chef. :)"

Recipe: Vegan bolognese sauce

Today I'll show you how to do bolognese sauce the vegan way :). I found this recipe when I was searching for more exciting ways to use tofu and it was love at frirst try. So, here it is ...


Ingredients:
- 1 leek, chopped
- 2 medium sized carrots, peeled, chopped
- 150 g of tofu
- 1 table spoon of tomato paste
- 3-4 dl of tomato sauce (I used pureed tomatoes that we keep in our freezer)
- salt to taste
- 1/2 tea spoon of curry powder
- pinch of red chili powder
- 2 table spoons of olive oil

Instructions:


1. Pour olive oil into preheated pan. Transfer chopped leek and carrots in it as well. Lower the heat and cook for about 2 minutes, so both vegetables become softer.


2. Place tofu in a food processor and process until minced (it should look like minced meet). Transfer it into a pan with vegetables. Stir.


3. Now add tomato paste and seasoning. Stir again. Add tomato sauce and place pan cover on top. Let it cook for at least 45 minutes (to 1 hour) on low-medium heat. Make sure you stir it occasionally while cooking. If tomato sauce evaporates, add some water. Serve with gluten-free pasta.


I served it with corn pasta, because that's what I had and wanted to eat, but it would be delicious combined with quinoa, amaranth, brown riceor even on its own.

Instead of leek use onion, instead of carrots use portobello mushroom, or use any kind of vegetables you prefer.

Recipe: apple pie

Today I want to share with you a really yummy apple pie recipe. It's healthy, vegan (if you use chia seeds instead of eggs), it's a little bit time consuming, but I think you'll love it :).

What do you need:


for dough:
100 g whole wheat flour
100 g oat bran
50 g almonds
50 g coconut oil
2 spoons of stevia
2 eggs or 2 spoons oh chia seeds (you just have to soak them in water for 10 minutes before doing anything with them)

for topping: (is this how it's called?)
2 big apples
half tsp cinnamon
juice from one lemon
handful raisins

Firstly, you process almonds and you put all dry ingredients for dough in a bowl. Mix them all together. Melt the coconut oil on heat. Add coconut oil and eggs or chia seeds (make sure you soaked them in water). Mix all together. Dough mixture is not supposed to be well combined, it should be a little bit crumbly.
Coat your smaller baking pan with coconut butter and spread the dough in it. Put it into a preheated oven (175˙C) for 25 minutes.


Meanwhile you prepare your topping. Peel the apples and you can slice them into really tiny pieces or grate them. Add cinnamon, lemon juice and raisins. Mix them all together.


After 25 minutes of dough baking you take out your pan and put the topping on. Spread it evenly and put it back in the oven for another 20 - 25 minutes.


Let it cool down a little and serve.

100 % Pure Strawberry Lemonade Hand Cream REVIEW

Today I will introduce you to my favourite hand cream. It's from 100 % Pure cosmetics, and the scent is Strawberry Lemonade. Mmm, yummy :).



I have really sensitive skin and I've got allergies to too much parfumed cosmetics, hars chemicals or it didn't do anything to my skin. I don't remember how I got introduced to this cream, but I remember it was love at first use :). 100 % Pure cosmetics is all natural, vegan, ingredients and final products are not tested on animals.

"Rich cream moisturizes and softens while nourishing your skin with anti-aging vitamins and antioxidants."
Ingredients.


The packaging is still small enough (57 g) to put it in my hand bag and moisturize whenever I need to wherever I am. It leaves my skin super soft, moisturized and smells amazing for a long time. I love using it in the winter time, not just because it nourishes my skin, but because of its fresh scent and it reminds me of summer time! :)

The only downside is probably the price. It costs 8 €, but I usually buy it on a discount :). But little goes a long way, so you really need a pea size for both hands, so cream lasts me for quite some time.

Recipe: vegan chocolate mousse/pudding

I don't really post two or more blog posts in a day, but since the last one was just "I'm on Facebook" information, I decided to write another post today, a recipe. Yay! I already posted a picture on Facebook in "Food" album, and I think it's time to share my favorite dessert with you :).

It's super easy to make (5 minutes), it's vegan, a healthy snack, dessert or even breakfast :)

Ingredients (for one person):
- one ripe avocado (use a smaller avocado or just half of bigger one)
- cocoa powder (preferably an organic one, I used regular one)
- agave nectar (or maple syrup)
- (optional) cinnamon


Put peeled and cut avocado into a food processor and mix until smooth consistency.


Add 2-3 spoons of agave nectar and mix. Add 2 spoons of cacao powder and little bit of cinnamon, mix again. Make sure that all ingredients are well combined.
Et voila! Serve and enjoy! :)

Instead of agave nectar, you can use honey, in that case it would be just vegetarian dessert :) (I'm so into vegetarian/vegan thing right now).
If consistency is too thick, use a little bit of soy or almond milk. Or just regular, if you don't care about the vegan part :).

Avocados are super foods, full of potassium, fiber, Vitamin E, folic acid and healthy fats. I will write another post soon on how to use avocados.
